Green Smoothie Recipe – Spinach & Almond Milk

Green Smoothie Recipe Spinach Almond Milk | Happygut.ca

This green smoothie recipe with spinach & almond butter is ah-mazing! This is how the creation came to life: I was at home, hard at work and, as per usual, I forgot to eat lunch and it was 2pm – yikes! I didn’t have a lot of time and needed something to fill up my belly quick. I had the following ingredients in the fridge: spinach, almond milk & almond butter. I whipped them together and voila! So simple and SO SO VERY delicious!!

The combination of apple and almond butter is the best! My body doesn’t like peanut butter so I always use almond butter in anything that I would use peanut butter in and it never disappoints! (Aside: apple + almond butter also makes a super quick and protein packed snack).

If you are nut free though, use sun butter (or any other nut free “peanut” butter). My nephew is severely allergic to peanuts so nuts are a big no no at my brother’s house. Whenever I’m at their place, I eat sun butter as my almond butter replacer and it tastes great! (I think almost exactly like peanut butter). So, in case you are nut free, feel free to replace the almond butter with sun butter and I’m sure it will taste super. I’ll be trying this recipe with sun butter instead of almond butter the next time I go to my bro’s house.

I’ll definitely be making this again and again. 🙂

Serves: 1

Ingredients for Green Smoothie Recipe Spinach Almond Milk

  • 1 cup almond milk
  • 1 apple, cored
  • 2 handfuls of spinach, washed
  • 2 tbsp of almond butter (or a nut free version, like sun butter)
  • 1-2 tbsp of maple syrup (or any other sweetener), optional
  • 1-2 tbsp hemp seeds (gives an extra 10.6 grams of protein!), optional (if you have it handy)

Directions for Green Smoothie Recipe Spinach Almond Milk

  1. Throw all the ingredients into a blender (I used a Blendtec) and mix it up!

Enjoy! 🙂

The Best Breakfast Kale Smoothie

Breakfast Kale Smoothie | Happygut.ca
Breakfast Kale Smoothie | Happygut.ca

This breakfast kale smoothie is one of my staple detox breakfast recipes. Not only is it incredibly nutritious, packed with kale and other superfoods, but it is also so delicious! I look forward to this breakfast from the moment I wake up. I throw a lot of things into my breakfast kale smoothie but feel free to use the recipe as a template and eliminate/add whatever else you fancy. 😉

I think a good baseline for the breakfast kale smoothie would be kale, apple, almond milk (or any other type of dairy free milk) and some protein like nuts/nut butter. After that, it’s fair game!

Serves 1-2 (one large glass, or 2 smaller glasses, as shown in the picture above)

Ingredients for Breakfast Kale Smoothie

  • 1 large or 2 small kale leaves
  • 1 small-medium sized apple, cored
  • handful of walnuts
  • 1 tbsp of almond butter
  • 1/2 cup almond milk (or any other dairy free milk)
  • 1 tsp flax seeds/ground flax
  • 1 tsp chia seeds/ground chia
  • 1 tsp hemp seeds
  • 1 tsp spirulina (I’m low in iron and spirulina helps me with my daily intake of iron)
  • 4 apricots (also high in iron and naturally sweet)
  • sometimes I also add a tsp of macha powder / maca powder

Directions for Breakfast Kale Smoothie

  1. Throw all ingredients into a high powdered blender (I use my Blendtec) and blend until smooth.
  2. Enjoy! 🙂

Let me know if you adapt the smoothie and how it turns out – I love hearing about cool kale smoothie ideas! 🙂

Anti Inflammatory Cereal – The Super Power Breakfast

Anti Inflammatory Cereal - The Super Power Breakfast

Alas, a delicious anti inflammatory cereal that I have officially termed “The Super Power Breakfast” 🙂

As mentioned in my previous post, Anti Inflammatory Breakfast Ideas, you can alternate the grains/flours for a porridge version. Or, eliminate the grains all together, and choose whichever fruit, nuts/seeds and super foods you like!

I’ll share 2 foundational anti inflammatory cereal recipes, one with grains and one without. Make any adjustments you like 🙂

I’d love to hear which variations you try and which ones you like best! Also please share any anti inflammatory cereal ideas you have discovered as well!

Note that the cereal with grains is more of a hot cereal (as you are cooking grains/flours). Conversely, the cereal without grains can be either hot or cold. This depends on whether you decide to warm up the milk and other ingredients.

Anti Inflammatory Cereal – The Super Power Breakfast with Grains

Ingredients

  • 2/3 cup water
  • 1/3 cup of your favourite grain/flour (options: oatmeal, oat flour, kasha, buckwheat flour, brown rice, brown rice flour,
  • quinoa, quinoa flour, amaranth, amaranth flour, you get the drift…..)*
  • 4 prunes
  • handful of berries (I use blueberries and goji berries)
  • a fruit
  • 2-3 tbsp seeds (pumpkin/sunflower)
  • 1/4 cup nuts (I use walnuts, omit of course if you have a nut allergy)
  • 1 tbsp flax
  • 1 tbsp chia
  • 1 tbsp hemp seeds
  • 1/4 cup dairy free milk**
optional: cinnamon, cardamon, nut/seed butter, additional fruit (e.g. sliced pears, apples, raisins etc.)—-

*If you are using oats, try to get gluten free oats if possible as oats are often contaminated with gluten. Also, do soak brown rice over night if you are using that as your grain.
**Dairy free milk include: soy, almond, rice, hemp

Directions

  1. Optional: Soak prunes, nuts & seeds overnight (makes them easier to digest).
  2. In the morning add water and grain/flour in a saucepan, and bring to a boil. If you are using a flour, make sure to whisk the water and flour together right away or else it will get clumpy
  3. Turn down and simmer for 5-10 minutes, stirring/whisking every 2 minutes, adding more water when needed. If you are using grains, cook accordingly – they usually take a longer time to cook than the flours.
Aside: I almost never use brown rice for this as it takes way to long to cook.
  4. Add remaining ingredients and cook for another 2-3 minutes.
  5. Remove from heat and enjoy!

Anti Inflammatory Cereal – The Super Power Breakfast without Grains

Ingredients

  • 4 prunes
  • handful of berries (I use blueberries and goji berries)
  • a fruit, chopped
  • 2-3 tbsp seeds (pumpkin/sunflower)
  • 1/4 cup nuts (I use walnuts, omit of course if you have a nut allergy)
  • 1 tbsp flax
  • 1 tbsp chia
  • 1 tbsp hemp seeds
  • 1/4 cup dairy free milk**
optional: cinnamon, cardamon, nut/seed butter, additional fruit (e.g. sliced pears, apples, raisins etc.)

Directions

  1. Optional: Soak prunes, nuts & seeds overnight (makes them easier to digest).
  2. For hot cereal: warm milk over medium heat. You can add the ingredients while the pot is on the stove or poor the hot milk into your bowl with all the ingredients.
  3. For cold cereal: Add all ingredients into a bowl.

What To Eat For Breakfast When Sick

What To Eat For Breakfast When Sick

Thinking about what to eat for breakfast when sick? Here is an idea for ya: vegan & gluten-free oatmeal packed with  antioxidants to get you better quick.

Everyone has been getting sick these days! In light of this sad fact, I decided to come up with a recipe to aid in the healing process.

I spent a fair bit of time researching what to eat for breakfast when sick and came up with a pretty extensive list. I combined the best ingredients with what I thought would go great with oatmeal. Luck for me (and you!) I had no shortage of items to choose from – ginger, turmeric, honey, cinnamon, the list goes on an on!

Turmeric and ginger are especially amazing. According to Home Remedies, “Turmeric’s anti-bacterial, anti-viral, and anti-fungal agents can help our body fight against colds, cough and flu….Turmeric’s key ingredient Curcumin is known for its anti-bacterial and anti-inflammatory properties. ”

As an aside, with my history of IBD, I take curcumin supplements to control my inflammation.

The result? Delicious! So delicious that we eat the brekkie just cuz! Getting the flu just got a bit more pleasant folks 😉

Serves: 1-2

Ingredients for What To Eat For Breakfast When Sick

  • 1/2 cup oatmeal (try to use steel cut oats if you can)
  • 1/2 cup almond milk (or any milk of your choice)
  • 1 tbsp grated ginger
  • 1 tsp turmeric
  • 1/4 tsp cinnamon
  • 1 tsp honey (or to taste)
  • pumpkin seeds

Directions for What To Eat For Breakfast When Sick

  1. Place milk and oatmeal in a pot on the stove and bring to a boil
  2. Lower heat, add remaining ingredients and simmer for 5-10 minutes
  3. Top with pumpkin seeds and whatever else you fancy ( I added flax and more grated ginger)

If you have any other ideas for a good breakfast when you have the flu, share in the comments below 🙂

Grain-free Egg-free Pancakes (Super Easy)

Grain-free Egg-free Pancakes

That’s right folks, you head it right: grain-free egg-free pancakes! I have been, or rather I should say my “gut” has been diggin’ grain free eating! I feel lighter, and have more energy!

This recipe is AMAZING and is now my go-to pancake recipe!

These pancakes also freeze really well. I’m always over ambitious on how much I think I will eat and end up having tons of leftover. I freeze them in a freezer ziplock bag and line them with parchment paper. Whenever I’m feeling for a pancake “fix” I’m able to take them out one at a time.

Let me know if you try it with flax and how it goes 🙂

Serves 2-4

Ingredients for Grain-free Egg-free Pancakes

  • 2 ripe bananas (the riper, the sweeter)
  • 4 tbsp chia seeds (preferably ground chia) + 3/4 cup water ( or 4 eggs, if you wish )
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1/3 cup coconut (or almond flour)
  • coconut oil (or any other oil) for greasing pan

Directions for Grain-free Egg-free Pancakes

  1. Mash eggs
  2. Mix all ingredients into a bowl
  3. Head a pan on medium heat and grease pan with oil
  4. Use 1/3 measuring cup and pour batter into pan.
  5. Wait until you see the batter start to bubble and then flip for another few minutes (they should be golden brown on both sides)

Enjoy with your choice of toppings (nuts, fruit, maple syrup, etc.)!

Candida Cleanse Friendly Cinnamon Biscuits!

I decided to go on my parasite candida cleanse after returning from India. God knows what kind of parasites I have raisin’ the roof up in my gut…. :S

Anywho, it’s pretty tough, I’m not going to lie. These are just a FEW of the things that I CANNOT have:

ALL kinds of sugar, natural or otherwise (this includes honey, maple syrup, all fruits except for tart apples and blueberries)
White stuff (bread, rice, etc.)
All Nuts
Yeast
Fermented/pickled stuff (olives, vinegar, etc.)
Most dairy
Most meat
Coconut
Mushrooms
Yams
and the list goes on and on…..

Well, I’m mostly vegan and gluten free so the dairy and meat aren’t biggies but taking away my fruit is hard and nuts is hard! I LOVE fruits and nuts!

I was craving something sweet (or should I say my parasites were craving something sweet) so I whipped these biscuits. They were pretty good, especially with the tahini! (I can have seeds on the cleanse – yea boiiii!!)

For any fellow candida cleansers or anyone else who wouldn’t mind challenging their taste buds – check it out! Although, I must warn you, this recipe isn’t for the faint of heart 😉

Ingredients

1 1/2 cups buckwheat flour,
2 tbsp. ground chia seeds
1 tbsp. cinnamon
Pinch of sea salt
1/2 tsp. powdered stevia or 5 drops liquid (use more if it’s not sweet enough)
1/2 cup butternut squash purée
1 cup of water
1/4 cup tahini

Directions

1. Mix all together, and you should have a dough that’s slightly sticky.
2. Spoon onto a parchment lined baking sheet and bake for 25-30 minutes at 350°F.
3. Drizzle some tahini on your biscuits.

Enjoy! 🙂

Gluten Free Buckwheat Pancake Mix Recipe

Gluten Free Buckwheat Pancake Mix Recipe

This gluten free buckwheat pancake mix recipe tastes like “normal” pancakes! I have served this to many of my don’t-give-a-@#$%-about-gluten friends (you know who I’m talking about, we all have ’em!). They gobble them up in no time, and have no idea they have just enjoyed a gluten free pancake mix recipe (*evil laugh) 🙂

I originally made this recipe for my partner dude, Irfan’s birthday breakfast. Irfan is one lucky guy! That’s right, I said it 🙂 Sometimes (just sometimes though!) I feel bad about taking Irfan on the anti-inflammatory gravy train (gluten free and vegan of course!) with me. Although let’s be real, he’s healthier and, in turn, happier for it :).

Nevertheless, because it was his birthday and all, I wanted to make pancakes that weren’t obviously gluten free tasting. And so the “Gluten Free Buckwheat Pancake Mix Recipe” was discovered 🙂

Serves: 8 pancakes

  • 1/2 cup buckwheat flour
  • 1/4 cup quinoa flour

  • 1/4 teaspoon salt
  • 1/2 cup almond milk (or other nondairy milk)
  • 1/2 cup water
  • 2 tablespoons pure maple syrup
  • 2 tablespoons oil
  • 1/2 teaspoon vanilla extract
  • oil to grease pan

Directions for Gluten Free Buckwheat Pancake Mix Recipe

I was so happy to eat these. Irfan and I are STILL on our cleanse, going onto week 8! We are not allowed to have any sugar, INCLUDING natural sugar, and INCLUDING most fruits.

I have been missing baked goods and so these muffins totally hit the spot! And so easy to make, it’s a win win!

I can’t take the credit for this, Jemila made this into a “cake” for us a few weeks back – thanks Jemila! 🙂
Side note: Jem is currently in Vietnam and will be teaching there for the next 2 years, you follow her adventures on her blog at everydayjems.

Ingredients

7/8 cup oil + 1/2 tsp sea salt (strange, I know but it is our “butter”)
3 tbsp ground chia
9 tbsp water
1 cup unsweetened pineapple juice from concentrate (we can have pineapples on our diet – hollaaaa 😉 )
2 & 1/2 cup buckwheat (I use light as it has less of an aftertaste)
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1/4 tsp salt
3 cups shredded carrots
optional: stevia (I put about 1/2 tsp of the clear extract, you could put more as mine wasn’t very sweet)

Directions

1. Preheat oven to 350 degrees.
2. Mix the chia and 9 tbsp water. Let sit for about 15 minutes.
3. Combine the olive oil and salt mixture (our “butter”) with the chia mixture, pineapple juice and stevia (if using).
4. Combine the buckwheat flour, baking powder, baking soda, spices and salt in a separate bowl.
5. Gradually add the flour mixture to wet mixture beating until well blended. Stir in carrots.
6. Spread batter into a greased muffin/cake/loaf pan.
7. Bake 30-45 minutes or until wooden toothpick inserted in center comes out clean. Cool completely on wire rack.
